
Zucchini Spears
When my zucchini turns into a giant overnight and I don’t feel like baking, I’ll make zucchini spears out of the green monsters.
~ Preheat over to 350 F.
~ Cut zucchini into spears 1 inch wide and 3 inches long, disposing of seeds if preferred.
~ Coat zucchini spears with oil of your choice (I use olive or avocado oil).
~ Arrange the spears on a baking sheet and sprinkle with salt, pepper, and garlic powder.
~ Bake at 350 F for 20 minutes or until they become tender. Overbaking will lead to mushy zucchini.
~ Remove from oven and enjoy immediately.
